Ingredients
1 pound baby potatoes, washed (I like to use fingerling)
1-2 TBSP pesto, plus extra for topping
2 TBSP grated fresh parmesan cheese
Kosher salt and fresh ground black pepper, to taste
1/2 lemon
Instructions
1. Bowl a pot of water and season with salt. Wash potatoes and cut any large ones in half. Boil for 10-15 minutes, or until fork tender. As potatoes are cooking, preheat oven to 400° F. Line a baking sheet with parchment paper or spray with cooing spray.
2. Once potatoes are tender, staring and place in a bowl. Toss the potatoes, pesto, salt and pepper together until fully coated. Spread them into an even layer on the prepared baking sheet. Roast in the oven for 20 minutes, flipping halfway. Sprinkle with parmesan ad cook for another 5-10 minutes until outside of the potatoes are crispy and inside is tender.
3. Take potatoes out of the oven and squeeze the juice of half of a lemon over the top of them. Serve the potatoes with extra pesto and more parmesan cheese.
