You guys I am not joking when I say these are INSANE! And you legit only need 2 ingredients to make the truffles! Extra ingredients are there to add flavour/decorate the truffles. You NEED to make these and make extra! Check out the recipe below

Makes 15-20 truffles

INGREDIENTS
8 oz semi-sweet or dark chocolate, chips or chopped
1/2 cup of canned coconut cream or milk (you can use heavy cream as well)
Optional:
1/4 tsp vanilla extract
Pinch of salt
Cocoa powder, coconut or nuts for rolling

INSTRUCTIONS
1. Chop chocolate if using bars, and place in a medium sized bowl. Make sure you are using full-fat coconut milk (or cream).
2. Heat the milk or cream in a small pot, until it just barely boils. Pour over the chocolate and stir until smooth. I actually like to try and leave a couple chunks of chocolate, if possible, for added texture. You can always add more chocolate once slightly cooled, if desired. Add vanilla and salt, if using, and stir until incorporated.
3. Refrigerate for at least 2 hours (I like to pop mine in the freezer to speed things up). Mixture should be firm enough to scoop out and roll. Scoop out balls, with a spoon or cookie scooper, and roll with your hands. If desired, roll truffles in cocoa powder, coconut or nuts.
4. Set on a plate lined with parchment, to prevent sticking. Refrigerate until ready to serve!
5. Truffles can last in the fridge or freezer for up to month (or even longer).
