Looking for the perfect, fudge-y gluten-free brownie? I got you covered. These brownies are super addicting, refined sugar and gluten-free! TIP: keep them in the fridge for a fudge like texture. SO GOOD.

INGREDIENTS

2/3 cup semi-sweet or dark chocolate chips

5 TBSP coconut oil

2/3 cup coconut sugar

2 eggs

1 tsp vanilla extract

2/3 cup almond flour

2 TBSP unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp kosher salt

Optional:

Mix in: 2/3 cup additional chocolate chips or nuts

Sprinkle top with coarse sea salt

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Line an 8×8 baking pan with parchment paper.
  2. In a small saucepan, slowly melt chocolate and coconut oil over low heat, until smooth and glossy. Remove from heat and set aside to cool.
  3. In a small bowl, whisk together sugar and eggs, until lighter in colour. Set aside.
  4. In a medium bowl, whisk together the almond flour, cocoa powder, baking soda and salt.
  5. Slowly whisk the egg and sugar mixture into the saucepan of melted chocolate. Whisk until smooth. Stir in vanilla.
  6. With a spatula or wooden spoon, stir in the dry ingredients and fold until until just mixed. Fold in the additional chocolate chips or nuts.
  7. Pour batter into prepared pan and smooth out the surface.
  8. Bake for 20-24 minutes, until edges are set and the centre is still soft and undercooked. Do not overcook!
  9. Sprinkle with coarse salt, if using, and allow brownies to cool before slicing.
