
Looking for the perfect, fudge-y gluten-free brownie? I got you covered. These brownies are super addicting, refined sugar and gluten-free! TIP: keep them in the fridge for a fudge like texture. SO GOOD.
INGREDIENTS
2/3 cup semi-sweet or dark chocolate chips
5 TBSP coconut oil
2/3 cup coconut sugar
2 eggs
1 tsp vanilla extract
2/3 cup almond flour
2 TBSP unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp kosher salt
Optional:
Mix in: 2/3 cup additional chocolate chips or nuts
Sprinkle top with coarse sea salt
INSTRUCTIONS
- Preheat oven to 350 degrees. Line an 8×8 baking pan with parchment paper.
- In a small saucepan, slowly melt chocolate and coconut oil over low heat, until smooth and glossy. Remove from heat and set aside to cool.
- In a small bowl, whisk together sugar and eggs, until lighter in colour. Set aside.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking soda and salt.
- Slowly whisk the egg and sugar mixture into the saucepan of melted chocolate. Whisk until smooth. Stir in vanilla.
- With a spatula or wooden spoon, stir in the dry ingredients and fold until until just mixed. Fold in the additional chocolate chips or nuts.
- Pour batter into prepared pan and smooth out the surface.
- Bake for 20-24 minutes, until edges are set and the centre is still soft and undercooked. Do not overcook!
- Sprinkle with coarse salt, if using, and allow brownies to cool before slicing.
