Use your Instant Pot to make this healthy and delicious brown rice recipe. Great as a side dish with roasted chicken thighs! You can also make this in a normal pot – just be sure to change the cook time of rice, as directed on the package. 

Instant Pot Brown Rice with Mushrooms

Serves: 4

Ingredients

1 tbsp avocado oil

1 onion, diced

2-3 cloves garlic, minced

2 tsp Worcestershire sauce

1/2 tsp dried thyme

1 lb sliced mixed mushrooms

1 cup brown rice

1 1/4 cup chicken broth

2 tbsp chopped parlsey 

salt and pepper, to taste

Instructions

  1. Set Instant Pot to saute and heat oil. Add onions and garlic and saute for 2-3 minutes.
  2. Add mushrooms, thyme, and Worcestershire sauce and cook for 5-6 minutes, stirring occasionally. Season with salt and pepper.
  3. Stir in rice and broth. Close lid on pressure cooker and set to seal. Set to pressure cook for 25 min.
  4. Quick release when timer goes off.
  5. Garnish with parsley and add more seasonings if needed!
  6. Enjoy
