
Use your Instant Pot to make this healthy and delicious brown rice recipe. Great as a side dish with roasted chicken thighs! You can also make this in a normal pot – just be sure to change the cook time of rice, as directed on the package.
Instant Pot Brown Rice with Mushrooms
Serves: 4
Ingredients
1 tbsp avocado oil
1 onion, diced
2-3 cloves garlic, minced
2 tsp Worcestershire sauce
1/2 tsp dried thyme
1 lb sliced mixed mushrooms
1 cup brown rice
1 1/4 cup chicken broth
2 tbsp chopped parlsey
salt and pepper, to taste
Instructions
- Set Instant Pot to saute and heat oil. Add onions and garlic and saute for 2-3 minutes.
- Add mushrooms, thyme, and Worcestershire sauce and cook for 5-6 minutes, stirring occasionally. Season with salt and pepper.
- Stir in rice and broth. Close lid on pressure cooker and set to seal. Set to pressure cook for 25 min.
- Quick release when timer goes off.
- Garnish with parsley and add more seasonings if needed!
