Simple summer bbq salad that’s FULL of flavour.

Serves 2

INGREDIENTS

Salad:
1 medium eggplant
2 medium heirloom tomatoes (or tomatoes of your choice)
4 oz halloumi cheese
Olive oil
Salt and pepper
Handful of basil

Dressing:
Olive oil
Balsamic vinegar glaze
Salt and pepper

WHAT TO DO
1. Pre-heat grill, to med-high.
2. Slice Eggplant to 1/3 inch thick pieces and brush with olive oil. Slice halloumi into 1/2 inch thick pieces, brush with olive oil. Slice tomatoes into ½ inch slices, set aside.
3. Grill eggplant until tender and nicely charred. Grill halloumi cheese until browned and grill marks appear on each side.
4. Arrange eggplant, tomatoes and cheese on a plate. Drizzle olive oil and balsamic glaze. Season with salt and pepper – be careful with salt as halloumi cheese tends to be salty on its own. Garnish with basil.
