Spring rolls are always a hit in my house! Bake them to make them healthier than the original version.

INGREDIENTS

SPRING ROLLS
1 Tbsp sesame oil
2 cups green cabbage, shredded
2 medium carrots (about 1.5 cups) peeled and grated
1 1/2 cups mushrooms, de-stemmed and sliced
3 cloves garlic, minced
1 inch piece fresh ginger, minced
1 Tbsp soy sauce or tamari
1-2 tsp honey
1-2 tsp sriracha
1 tbsp cornstarch
1-2 tsp water
16 spring roll wrappers (6″ x 6″), defrosted
water (for sealing spring rolls)

DIPPING SAUCE

2 Tbsp soy sauce or Tamari
1/2 Tbsp toasted sesame oil
1 Tbsp rice wine vinegar
Pinch of chilli flakes, garlic chilli paste or sriracha
1 tsp sesame seeds
1 Tbsp finely sliced green onions

INSTRUCTIONS
1. Preheat your oven to 400F. Line a large baking sheet with a wire rack or lined with parchment paper.
2. In a large skillet or frying pan, heat the sesame oil over medium-high heat. When hot, add the cabbage, carrots, shiitake mushrooms, garlic, and ginger. Sauté for about 5 minutes, until the vegetables and mushrooms are cooked.
3. As vegetables are cooking, in a small bowl mix together soy sauce, honey and sriracha (optional). Make a slurry with cornstarch and water and add to soy sauce mixture. Taste and add more honey or sriracha as desired. You can also add in 1 Tbsp of hoisin sauce if you have!
4. Stir soy sauce mixture into vegetables and cook until sauce thickens. Remove from heat and let cool before assembling the spring rolls. You can put it in the fridge to cool faster, if you want.
5. Set up a workstation with your spring roll wrappers, spring roll filling, a small bowl of water, and your prepared baking tray.

7. For crispy rolls, brush with a 1 Tbsp of neutral oil. Bake for 15 minutes on one side, flip and bake for another 10-15 mins until golden brown. While baking mix all ingredients for the dipping sauce together in a bowl.
8. Serve immediately with dipping sauce. Can be stored in the fridge for 3-5 days. To reheat, preheat oven to 400F and cook until toasted and heated through.
