This delicious and easy stovetop granola takes 5 minutes and tastes amazing! I’m loving this more than traditional baked granola right now and love eating it with yogurt or as a cereal with almond milk. Check out the recipe!

STOVETOP GRANOLA

Yields: 3 cups 

INGREDIENTS

2 Tbsp coconut oil or neutral oil of choice

1/4 cup pure maple syrup or honey

2 cups rolled oats

1/2 cup sliced almonds, pecans, or other nut of choice

1/2 cup coconut flakes, or extra nuts 

1 TBSP flaxseed, hemp seed and/or chia seeds

1/2 – 1 tsp cinnamon, to taste

pinch of salt

Optional: chopped dates, cranberries, chocolate chips

INSTRUCTIONS

  1. Heat a large skillet or pan on the stove over medium-high heat and add coconut oil and maple syrup. Cook until it bubbles, for about 1 minute. Stir in the remaining ingredients. 
  2. Continue moving oat mixture around with a wooden spoon or spatula until the oats and nuts start to turn golden brown, about 3–4 minutes. Make sure your heat isn’t too high, to prevent it from browning too quickly. 
  3. Remove the pan from the heat and let granola cool completely before storing in an airtight container. If you like dried fruit you can stir 1/2 cup or so into the granola as soon as you take it off the stove.If adding chocolate chips wait till granola is fully cooled.
  4. Stays good in an airtight container for at least 6 weeks, if it’ll last that long!
