
Lemon Garlic Shrimp
Serves: 2
INGREDIENTS
1 tbsp butter (I use lactose-free butter)
1/2 tbsp extra-virgin olive oil
1/2 lb medium shrimp, peeled and deveined
1/2 lemon, juiced
1 clove garlic, minced
1/2 tsp crushed red pepper flakes
Salt and pepper, to taste
Optional: splash of dry white wine
Freshly chopped parsley, for garnish
WHAT TO DO
1. In a large skillet over medium heat, melt butter and olive oil. Add shrimp, garlic, and crushed red pepper flakes. Season with salt and pepper. Cook shrimp for about 3 minutes, flip on to other side, and cook for another 3 minute – until shrimp is pink and opaque. ⠀⠀
2. Remove from heat add in lemon juice and splash of white wine. Garnish with parsley and serve immediately.
