
I love making veggie soup with whatever vegetables I have in the fridge! The combinations are endless. It’s all about adding the right seasonings to get the most flavour out of your soup. Here’s what I do:
Ingredients:
2 tbsp avocado oil
1 leek, thinly sliced
2 celery stalks, sliced
2 large zucchini chopped
2 red peppers, chopped
3 large carrots. peeled and chopped
1/2 tsp kosher salt
Black pepper, to taste
1 tsp onion powder
1 tsp garlic powder
1/4 tsp chili flakes
2 tsp dried parsley
4 cups of vegetable or chicken stock
1-2 tbsp nutrition yeast
You can also try adding: broccoli, turnips and potatoes
Instructions:
- Heat a large Dutch oven or pot to medium-high. Add oil and leeks. Sauté until leek is soft. Add vegetable and saute until slightly browned.
- Season with salt, pepper, onion, garlic powder, chilli flakes and parsley.
- Add broth and bring soup to a boil.
- Cover the pot and reduce heat to medium-low. Simmer until vegetables have softened completely, about 20-30 minutes.
- Blend soup until smooth. Add nutritional yeast for added flavour. If needed, adjust seasonings and add salt & pepper, to taste.
