
This garlic mushroom pasta recipe is easy to make and so delicious! I like to use mushrooms that are in season. You can sub butter for olive oil if you’re dairy-free! I use my favourite @pasta_rummo lentil pasta – use any pasta you’d like! Check out the recipe below ⬇️
Garlic Mushroom Pasta
Serves: 2
INGREDIENTS
4 oz uncooked pasta
3 TBSP butter (or olive oil if dairy-free)
1 TBSP olive oil
1/2 medium onion chopped
7 oz mushrooms, sliced (I used oyster + cremini mixed)
3 cloves garlic, minced
1/2 cup freshly grated parmesan cheese (omit or sub nutritional yeast if dairy-free)
2 TBSP fresh parsley, chopped
1/2 lemon, juiced
Salt & pepper to taste
1/2 tsp red chilli flakes
INSTRUCTIONS
- Boil a pot of salted water and cook the pasta according to package directions. Save pasta water.
- Meanwhile, prep your ingredients.
- Start by adding olive oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once butter is bubbling, add the onions, garlic and mushrooms. Sauté, stirring occasionally until mushrooms and onions are browned & caramelize – for about 8-10 minutes. The longer the go the more flavour you get.
- Stir in the rest of the butter. Cook for about a minute. Add left over pasta water to create a sauce. Start by adding 1/4 cup and add more as needed.
- Take the pan off the heat and stir in the parmesan cheese, parsley and lemon juice to taste. Add pasta and toss with the sauce. Season with salt & pepper, chilli flakes and more parmesan or parsley as needed. Serve immediately.
