Ingredients

1 3/4 cup oat flour
1/2 cup unsalted butter, melted
3/4 coconut sugar
2 large eggs
1 tsp vanilla
1 tsp baking sofa
1/2 tsp salt
1/2 plain Greek yogurt
3 ripe bananas
1/2 cup mini chocolate chips
Optional: 1/4 cup shredded coconut

Instructions

1. Preheat oven to 350F and like a muffin tin.
2. In a large bowl mix together the butter and sugar. Then add eggs and vanilla. Mix in oat flour, baking soda, and salt.
3. In a medium bowl, mash bananas. Stir in yogurt. Fold in bananas and greek yogurt mixture into the flour mixture.
4. Pour into the prepared muffin tin.
5. Bake for 18-20 minutes. Check with a toothpick to make sure they are fully cooked.
6. Let cool before eating.
