If you’re looking for a juicy AF meatball this is the recipe for you! Here’s how I make them:

Makes: 8 big meatballs

Ingredients
1 lb ground chicken
8 oz ricotta, drained
1/2 cup parmagiano-reggiano, freshly grated
1 large egg
1 tbsp fresh or dried parsley
1 tbsp dried oregano
1 tsp onion powder
1/2 tsp red chili flakes
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper

Instructions
1. Preheat oven to 450 F. Line a baking sheet with parchment paper.
2. Mix all ingredients together in a large mixing bowl.
3. Create 2” sized meatballs and place on baking sheet.
4. Baked for about 15 minutes, until meatballs begin to brown and are cooked through. You can check temp – should be 160-165 degrees.
