This green glow salad is my new obsession! The dressing is drinkable and also delicious chicken, salmon and shrimp. Here’s how I make it:

Ingredients

Salad

1 head of romaine

1/2 English cucumber or 2-3 baby

1 avocado

Dressing

1 cup basil leaves 

1/2 cup fresh parsley

1 cup spinach 

2 cloves garlic

1 shallot

1 tbsp dijon 

1/4 cup olive oil

1/4 cup apple cider vinegar or white balsamic (if you like your dressing sweeter) – I mix the two! 

2 tbsp nutritional year

Salt and pepper to taste

How to Make:

  1. Wash and finely chop the romaine and cucumber. Place in a large bowl. 
  2. Add all dressing ingredients to a blender and bend until smooth.
  3. Slice avocado and add to salad bowl. Pour dressing over and toss salad.
