This is officially my new go-to tomato sauce recipe. I almost couldn’t believe how good this came out! The roasted garlic adds such a creaminess and flavour to the sauce, you will legit want to lick your plate clean (I totally licked mine)! 4 INGREDIENTS is all you need!

4 INGREDIENT ROASTED GARLIC TOMATO SAUCE

INGREDIENTS
2-3 lbs cherry tomatoes, stems removed
2 bulbs garlic
1 large onion, chopped
Drizzle of olive oil (around 3 tbsp)
Salt and pepper, to taste
Optional: Chilli flakes

INSTRUCTIONS
1. Preheat oven to 425 F. Drizzle about 1 tbsp olive on a baking sheet.
2. Add little slits into each cherry tomato, so they don’t explode in the oven. Cut the top of the garlic bulbs.
3. Add onions, tomatoes, full garlic bulbs to the baking sheet in a single later. Top with seasoning and big drizzle of olive oil.
4. Roast in the oven, uncovered, for approximately 30 minutes. It’s ready when the garlic bulbs are soft and cook through.
5. Let the garlic cloves to cool down before touching. Once cool enough to handle, squeeze out roasted garlic into a food processor, blender or bowl.
6. Add the tomatoes, onion and olive oil and blend until it reaches your desired consistency. I use an immersion handheld blender, as I like it super rustic. Taste and season with more salt and pepper if desired.
7. You can even make this into a roasted tomato soup by adding vegetable or chicken stock to it.
8. Enjoy with your favourite pasta!
