I love a good dip! Makes a great snack, side dish or salad add on! Check out the recipe for my smokey Zucchini Baba Ganoush below!

Makes about 1.5 cups

INGREDIENTS
2 large zucchini
2 tbsp olive oil
2-3 Tbsp tahini
1-2 tbsp fresh lemon juice
1 clove garlic, crushed
2 tbsp parsley, chopped
Salt and pepper, to taste
Optional: pinch of red pepper flakes

INSTRUCTIONS
1. Heat grill or grill pan to medium-high. If roasting, preheat oven to 400 F.
2. Cut off the ends of each zucchini, slice in half, lengthwise, place on a baking sheet lined with parchment paper and drizzle on the olive oil, salt and pepper.
3. Grill until just charred and cooke through, about 7 minutes. If roasting, roast in the oven for 20-30 minutes. Allow zucchini to cool enough to handle.
4. In a food processor combine 1 tablespoon olive oil, zucchini, garlic, tahini, lemon juice, salt and pepper, and red pepper flakes if using. Puree until smooth.
5. Stir in chopped parsley. Season with more salt and pepper if needed.
6. Serve with more chopped parsley and pita, naan bread or crudite!
