These cottage cheese pancakes are light and fluffy and packed with 6 g of protein per pancake! Recreate this brunch fave at home. Try using oat flour to make them gluten-free.

Cottage Cheese Pancakes

Ingredients

1 cup cottage cheese
2 eggs
1/2 tsp vanilla
1 cups white flour, whole wheat flour or oat flour
1 tsp baking powder
1/4 tsp salt
1/4 cup milk optional, if needed (depending on how wet cottage cheese is)

Instructions

  1. Start by mixing together the cottage cheese, eggs and vanilla. Mix with a spoon until the batter is well combined.
  2. In a small bowl, mix together the flour, baking powder and salt. Add into the wet mixture. Mix until no pockets of flour remain. At this point, you can see whether the batter needs milk to thin it out. If adding milk, start with 1/8 cup and add more as needed. Batter should be thick but thin enough to pour out onto pan.
  3. Heat a nonstick pan over medium heat for 1-2 minutes. Spray with light oil.
  4. Measure ¼ cup portions and pour onto the greased pan in pancake shape. Cook on one side for roughly 2 minutes, until golden. Flip and cook for another 2 minutes.
  5. Serve the pancakes with syrup and berries! Enjoy@
