If you are an OG BITK follower than you remember this recipe for a couple years ago! This is a staple on my Passover dessert menu and an amazing treat for anytime of the year! For “special occasions” I like to make them sweeter, but for a regular after dinner dessert craving I usually cut the sugar in half- and they still come out AMAZING. FLOURLESS COOKIE BARS

INGREDIENTS

2 cups almond flour
1/2-1 cup coconut sugar or brown sugar
2 eggs
1/4 tsp sea salt
1/2-1 cup semi-sweet chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 F. Line a 8×8 pan with parchment paper or spray oil to coat.
  2. Mix all ingredients together, except the chocolate chips, in a large bowl until thoroughly combined. Batter will be very thick. Fold in chocolate chips.
  3. Pour into baking pan and press in with hands. I like to wet my hands slightly to prevent them from sticking. Top with more chocolate chips if desired!
  4. Bake for 20-25 minutes until golden brown and top is set. Watch it carefully towards the end, as almond flour can burn easily. Let cook completely before removing from the pan and slicing into squares.
  5. Enjoy!
