I love making veggie soup with whatever vegetables I have in the fridge! The combinations are endless. It’s all about adding the right seasonings to get the most flavour out of your soup. Here’s what I do:

Ingredients:
2 tbsp avocado oil
1 leek, thinly sliced
2 celery stalks, sliced
2 large zucchini chopped
2 red peppers, chopped
3 large carrots. peeled and chopped
1/2 tsp kosher salt
Black pepper, to taste
1 tsp onion powder
1 tsp garlic powder
1/4 tsp chili flakes
2 tsp dried parsley
4 cups of vegetable or chicken stock
1-2 tbsp nutrition yeast

You can also try adding: broccoli, turnips and potatoes

Instructions:

  1. Heat a large Dutch oven or pot to medium-high. Add oil and leeks. Sauté until leek is soft. Add vegetable and saute until slightly browned.
  2. Season with salt, pepper, onion, garlic powder, chilli flakes and parsley.
  3. Add broth and bring soup to a boil.
  4. Cover the pot and reduce heat to medium-low. Simmer until vegetables have softened completely, about 20-30 minutes.
  5. Blend soup until smooth. Add nutritional yeast for added flavour. If needed, adjust seasonings and add salt & pepper, to taste.
