For the 5 weeks that I stayed in Miami this winter, I ate this salad from Pura Vida almost every single day – it’s that good! I don’t what took me so long to recreate it – probably the fear of slicing my finger off when shaving the brussel sprouts. But finally here is the recipe!

Serves: 4-6

For the Salad:
1 lb brussel sprouts
1 medium tart apple – I used honey crisp
1/4 cup dried cranberries
1/4 cup toasted sliced almonds or chopped pecans
1/4 cup crumbled feta cheese

Apple Cider Dressing:
1/3 cup apple cider vinegar
1/3 cup extra virgin olive oil
1/2-1 tbsp maple syrup or honey (more if you like it sweeter)
1 tsp dijon mustard
1/2 tsp garlic powder
Salt and pepper, to taste

How to make it:
1. Rinse Brussel sprouts and cut off any disclosed leaves.
2. Use a mandolin CAREFULLY or a food processor to shave the brussel sprouts into fine pieces. Rince shaved brussel sprouts in cold water and use a salad spinner to drain off excess water. Place in a large bowl and set aside
3. Make dressing by combining all dressing ingredients and whisk until emulsified.
4. Julienne apple into thin slivers. Add to the brussel sprouts, with the dried cranberries, nuts and feta.
5. When ready to serve, add dressing and toss salad to combine.
