Not only is the soup delicious and perfect for a cold day, it’s so easy to make! All you need to do for prep is chop some veggies of your choosing and you get a healthy and hearty soup! Easy Vegetable Soup

Serves: 8 

INGREDIENTS

2 tbsp avocado oil

1 medium onion, chopped

4-5 carrots, peeled and chopped

2-3 stalks of celery, chopped

3 medium white potatoes, diced in 1/2 thick pieces 

1/3 cup chopped fresh of dried parsley

1/2 tsp dried thyme

1/2 tsp paprika

2 bay leaves

Salt and pepper to taste 

2 cloves garlic, minced

2 boxes of low-sodium chicken or vegetable broth 

1 can diced tomatoes (undrained)

Optional vegetable add-ins:

1 1/2 cups fresh or frozen green beans 

1 1/4 cups fresh or frozen corn 

1 cup frozen or fresh peas 

INSTRUCTIONS

  1. Heat avocado oil in a large pot, over medium-high heat. 
  2. Add onions, carrots, celery and saute until onion becomes translucent, about 4 minuets. Add in garlic and sauté for another 30 seconds.
  3. Add in potatoes, parsley, thyme and paprika. Stir and cook for about 2-3 minutes.
  4. Add in broth, tomatoes, bay leaves, salt and pepper. 
  5. Bring to a boil. Reduce heat to medium-low, cover and let simmer until potatoes are tender – about 20-30 minutes.
  6. Add other veggies if adding at the same time as potatoes. Serve warm!
  7. Enjoy
