Turkey Sweet Potato Shepherd’s Pie
Servings: 4

Ingredients

For the turkey filling

  • 1 tbsp olive oil
  • 1 lb ground turkey meat
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 cups fresh or frozen chopped veggies
  • 1 tsp dried thyme
  • 2 tsp tomato paste
  • 1 tsp paprika
  • salt and pepper to taste
  • 3/4 cup chicken stock
  • 1 tbsp cornstarch

For the sweet potato filling

  • 3 large sweet potatoes
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • salt and pepper to taste

Instructions

  1. Place sweet potatoes in a large pot. Cover with cold water. Add one teaspoon of salt. Bring to a boil, then reduce to a simmer and cook until very tender, about 20 to 30 minutes.
  2. Preheat your oven to 400 F. Prepare filling while potatoes are cooking.
  3. Heat a large skillet over medium-high heat and add the olive oil. Add onion and garlic, and cook until they begin to soften and are fragrant.
  4. Add in turkey and brown meat while breaking up into pieces. Once turkey is brown but not fully cooked, add in the diced veggies, thyme, tomato paste, paprika, salt and pepper. Cook over medium heat just until the vegetables begin to soften.
  5. Add chicken stock to the pan and begin to simmer. Add cornstarch over top, and simmer until stock starts to thicken further. Once turkey is fully cooked, turn the heat off. 
  6. When the sweet potatoes are cooked, put them in a bowl with the paprika, parsley, salt and pepper, and mash until smooth.
  7. In a 9×9 pan, Add turkey and smooth out mixture as much as possible. Dollop the mashed sweet potatoes over the top, smoothing them out completely.  Use a fork to draw furrows in the sweet potato topping.
  8. Bake shepherds pie for 30 minutes, until the potatoes begin to turn golden brown on top and the filling starts to bubble up around the sides of the skillet.
  9. Let sit at room temperature for 5 minutes before serving.
