
This soup is so simple to make – healthy, comforting and filling! Add pasta to it to make it even heartier! Check out the recipe below
HEARTY TURKEY SOUP WITH VEGGIES
Serves: 6
INGREDIENTS
1 TBSP olive oil
2 sticks celery, chopped
1/2 medium onion chopped
2 cloves garlic, minced
1 tsp Italian seasoning
1/2-1 tsp red chilli flakes (optional)
1 lb ground turkey
1 can cannellini beans, drains (I used a bean mix)
2 medium carrots, sliced thinly
4 cups chicken broth or bone broth
1 cup water
1 tablespoon lemon juice or more, to taste
2 cups (packed) fresh baby spinach
Salt & pepper, to taste
Optional: 1-1.5 cups of pasta of choice
INSTRUCTIONS
- Add oil, celery, and onion to a soup pot over medium-high heat, and sauté for 4-5 minutes, until onion starts to slightly brown.
- Stir in the garlic, Italian season and red chilli flakes and cook for 30 seconds, until fragrant.
- Add in the ground turkey and cook until it’s mostly white. Break up with a spoon as it cooks for about 4-5 minutes.
- Add in the beans, carrots, broth, and water. Increase the heat to high and bring it to a boil. Cover the pot, reduce the heat and simmer for at least 10 minutes.
- Add in the lemon juice – add more if you like a more lemon-y flavour. Then add the spinach. Cook for a couple more minutes until the spinach wilts. Season with salt & pepper as needed.
