Easy healthy ground lamb bowls that you can customize any way you want! Such an easy dinner and makes amazing leftovers.

Servings: 4

INGREDIENTS

Ground Lamb:
1 lb ground lamb
1 Tbsp olive oil A
1/4 cup onion, diced
4 cloves garlic, cloves
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp red pepper flakes
1/4 tsp ground ginger
Salt and pepper, to taste
2-3 tbsp pine nuts
Optional: 1/4 cup fresh mint + fresh parsley, chopped

Cucumber Yogurt Salad:
1 cucumber, cut into 1/2 inch pieces
1/4 cup plan greek yogurt
1 tsp fresh or dried dill
1/2 tbsp lemon
Salt and pepper, to taste

Options for the bowls:
Brown rice
Diced tomato
Hummus
Feta Cheese
Lettuce
Pita bread

INSTRUCTIONS

  1. Heat a large saute pant over medium heat. Add olive oil.
  2. When oil is hot, add onions and garlic. Saute for 2-3 minutes, until softened and fragrant. Add ground lamb and cook until browned and cooked-through – about 5 minutes.
  3. Add paprika, garlic & onion powder, red pepper flakes, ginger, salt and pepper. Mix until fully combined and cook for another 1-2 minutes. Stir in pine nuts and let them toast with the meat for 1 minute. Remove from heat and stir in fresh herbs.
  4. To make cucumber yogurt salad: Combine all ingredients and stir to combine. Season to taste.
  5. Make your bowls! Top with more fresh herbs and hummus!
