Delicious homemade juicy chicken gyros! The longer you marinate the better they are. Serve in a pita, with rice or a salad! They also make amazing leftovers!

Healthier Chicken Gyros

Serves: 6

INGREDIENTS

CHICKEN MARINADE

2 lbs chicken breast or thighs, cut into 1/2 inch pieces
1/4 cup greek yogurt
3 tbsp fresh lemon juice
2 tbsp olive oil
2 tsp dried oregano
Salt and peper, to taste

TZATZIKI SAUCE

1.5 cup greek yogurt
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp fresh dill, chopped
2-3 garlic cloves, minced
1 cucumber, grated or cubed and squeeze to drain any excess liquid
Salt and pepper, to taste

INSTRUCTIONS

  1. Place chicken and all ingredients in a bag or container and shake to fully coat. Let marinate for at least 30 minutes – the longer the better!
  2. To make tzatziki sauce, stir together yogurt, olive oil, lemon juice, dill, garlic, salt and pepper. Squeeze excess water out of cucumber then stir into yogurt mixture. Add salt and pepper. Taste for seasonings.
  3. To cook chicken, heat skillet over medium high heat. Drizzle olive oil in pan. Add chicken and cook for 8-10 minutes until fully cooked, allowing to brown on each side.
  4. Serve with homemade tzatziki, pita bread, rice or greek salad!
