This soup is so simple to make – healthy, comforting and filling! Add pasta to it to make it even heartier! Check out the recipe below

HEARTY TURKEY SOUP WITH VEGGIES

Serves: 6 

INGREDIENTS

1 TBSP olive oil

2 sticks celery, chopped

1/2 medium onion chopped

2 cloves garlic, minced

1 tsp Italian seasoning 

1/2-1 tsp red chilli flakes (optional)

1 lb ground turkey

1 can cannellini beans, drains (I used a bean mix)

2 medium carrots, sliced thinly

4 cups chicken broth or bone broth 

1 cup water

1 tablespoon lemon juice or more, to taste

2 cups (packed) fresh baby spinach

Salt & pepper, to taste

Optional: 1-1.5 cups of pasta of choice

INSTRUCTIONS

  1. Add oil, celery, and onion to a soup pot over medium-high heat, and sauté for 4-5 minutes, until onion starts to slightly brown.
  2. Stir in the garlic, Italian season and red chilli flakes and cook for 30 seconds, until fragrant.
  3. Add in the ground turkey and cook until it’s mostly white. Break up with a spoon as it cooks for about 4-5 minutes.
  4. Add in the beans, carrots, broth, and water. Increase the heat to high and bring it to a boil. Cover the pot, reduce the heat and simmer for at least 10 minutes.
  5. Add in the lemon juice  – add more if you like a more lemon-y flavour. Then add the spinach. Cook for a couple more minutes until the spinach wilts. Season with salt & pepper as needed. 
  6. Enjoy!
