Who doesn’t love Taco (or Fajita) night! Here’s my go-to recipe for chicken fajitas, all made in one skillet!⠀

HEALTHY CHICKEN FAJITAS

Serves 2-3⠀

INGREDIENTS⠀

1 lb boneless skinless chicken breasts, cut into strips ⠀
1 red bell pepper, cut into strips⠀
1 medium onion, cut into strips⠀
2 tbsp olive oil ⠀
1 tbsp lemon juice ⠀
1 tsp garlic powder⠀
1/2 tsp chili powder⠀
1/2 tsp paprika⠀
1/4 tsp crushed red pepper flakes, optional⠀
Optional:⠀
Tortillas, brown rice, guacamole, salsa, taco sauce, etc. ⠀

INSTRUCTIONS

1. In a large bowl, combine 1 tbsp of olive oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. You can refrigerate for 1-2 hours, or use right away.⠀
2. In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until tender. Remove and keep warm.⠀
3. In the same skillet, cook chicken over medium-high heat until no longer pink, 5-6 minutes. Return pepper mixture to pan; heat through.⠀
4. Add more seasoning, salt and pepper if desired!⠀
