An elevated version of your traditional roasted sweet potatoes! Crispy and sweet, these make a fabulous side dish that can be eaten alone or with your favourite protein. They also make great leftovers and keep well in an airtight container in the fridge for up to 5 days!

Teriyaki Glazed Sweet Potatoes

Serves: 4

INGREDIENTS

2 medium sweet potatoes, clean and cubed

1/4 cup soy sauce or tamari

1 tbsp honey or coconut sugar

2 tsp chilli sauce or sriracha

1 tsp toasted sesame oil

Salt and pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 425 F. Line with parchment or spray a baking sheet lightly with oil.
  2. Place the sweet potatoes on the baking sheet and generously season with salt and pepper. Cook the sweet potatoes for 20-30 minutes, tossing halfway, until browned and cooked through.
  3. Combine soy sauce, honey, chilli sauce and sesame oil. Pour sauce over sweet potatoes and toss to coat. Bake for another 5-10 minutes, until sauce reduces.
  4. Top with green onions and sesame seeds. Serve hot!
